Kombucha is a fermented beverage that is believed to have originated in China some 2000 years ago. It is a non-alcoholic drink made with green or black tea (or both), and a culture called a SCOBY (symbiotic culture of bacteria and yeast) which contains a host of probiotics. During this process, bacteria and yeast form a mushroom-like film on the surface of the liquid. This is why kombucha is also known as “mushroom tea.”

The tea is left to ferment during which the yeast breaks down the sugar into carbon dioxide and ethanol. The bacteria then use this carbon dioxide and ethanol to transform the tea into kombucha. After weeks of fermentation, the resulting uniquely sweet-tart brew is then blended with artisanal herbs and flavours to create variants such as ginger, lemon lavender, guava chilli and mango among others.

1. Contains minimal amounts of sugar, making it a great substitute for sugary fizzy drinks, juices, or caffeine loaded coffee

2. Makes for a healthy snack option or to simply curb hunger

3. Allegedly helps balance the gut microbiome in humans, essentially improving our gut health

4. Said to help improve immunity as well as relieve headaches and migraines

Although there is still no concrete supporting evidence for some of the health claims of kombucha, we can still appreciate the potential benefits of fermented foods. We love kombucha for its versatility, there are so many options to choose from or even make yourself!
